Christmas Cherry Snow Bliss Balls

These balls are a healthy treat ... and they taste just as good as they look. They make great homemade gifts and can be gift wrapped in retro jars or with Christmas paper and ribbons.
Ingredients:
1 C raw cashews
1 C frozen cherries
10 fresh medjool dates, seeds removed
2 C desiccated coconut
1 t vanilla paste
pinch of salt
Desiccated coconut or beet powder, for rolling
Method:
Place the cashews in the food processor and blend until smooth. Add all the other ingredients and pulse at high speed until well combined and sticking together.
Roll into small balls and then coat in desiccated coconut or beet powder. Refrigerate.
These will freeze well or can be stored in the fridge for a week.
Note:
· Beetroot powder can be made by dehydrating grated beetroot. When dry, blend to a fine powder using a high-powered blender. This can be stored in the freezer. Alternatively, velvet latte powdered drink mix that is available at health food stores can be used.
